I’ll admit this right from the start. I have never been a fan of chicken pot pie. Fillings were usually stodgy and flavourless. The pastry was never quite right and the whole thing just felt like slop. Maybe it’s the cold dreary weather we’ve been having but Ive really been craving something hearty and comforting. The idea of the pot pie popped in my head but I was sure I would spend an hour making it only to re-inforce what I already knew, pot pies are not great. BUT! Alas! I was wrong. This recipe is really worth your time. Especially if you’ve never enjoyed chicken pot pie on the past.
If you’re already a lover than I also think you will enjoy my version. White wine and creme fraiche give the pie a little tang which is a really welcome flavour note to contrast the richness. Fresh herbs like thyme and sage help again to brighten and lift. Im sure these things don’t reduce calories by adding them but they certainly can make something which is rich, feel light.
For the chicken element of this chicken pot pie you can chose your own adventure. Poach your chicken in the chicken stock the recipe calls for, roast them in the oven, pan-fry them before sauteeting your veggies or perhaps easiest, pull them from a store bought rotisserie chicken. Whatever method you chose to cook your chicken, from then on, everything gets made in one pan.
I made the decision to scatter squares of puff pastry over the top of my pie for a few reasons. Firstly I wanted the pie to have space the bubble up and reduce a bit while it baked. The squares, not covering the entire surface, do just that. They are easier than a lattice top because you’ll probably want to do this step while the pan is still hot. I also think that cutting the puff pastry like this prevents it from rising too much. I like the texture you achieve when they are a bit soggy on the bottom and puffed and crisp on top, almost like crunchy dumplings.
I think this is a perfect recipe for another wet weekend like the forecast is showing here in Sydney but even in the sun, this dish is glorious, warming, hearty and comforting.
